Mexican Beef Stir Fry

1 lb. beef flank steak
2 tbsp. oil
1 tsp. cumin
1 tsp. garlic salt
1 tsp. oregano
1 red bell pepper, cut into thin strips
1 medium onion, chopped
1 to 2 jalapeño peepers, seeded and cut into silvers

Cut beef flank diagonally across the grain into 1/8” slices. Combine oil,
cumin, garlic salt and oregano. Heat 1 tbsp. of oil mixture in large pan
until hot. Add red pepper, onion and jalapeno; stir fry over medium high
heat 2 to 3 minutes or until tender-crisp. Remove from pan; reserve.
Stir fry beef strips, ½ at a time, in remaining oil mixture 1 to 2 minutes.
Return vegetable to pan and heat through.

Mexican Beef Stir-Fry can be served on taco shells or tostadas with garnish of
guacamole or sour cream, if desired.

Makes 4 servings
