2 cup prepared Mexican or Spanish-style rice mix
¼ cup thinly sliced green onions
4 whole boneless, skinless chicken breast
½ cup unseasoned dry bread crumbs
¼ cup grated parmesan cheese
½ tsp. chili powdered
½ tsp. garlic salt
¼ tsp. cumin
¼ cup margarine, melted
In medium bowl, combine prepared rice and green onions. Pour chicken breasts
between 2 sheets of waxed paper to ¼” thickness. Place about ½ rice mixture
in center of each chicken breast; roll and tuck ends under and secure
with wooden skewers.
In pie plate, combine remaining ingredients except margarine; blend well. Roll
chicken bundles in margarine, then in crumb mixture. Place seam-side down
in 12 x 8 glass baking dish. Bake, uncovered, at 400° for 15 to 20 minutes
or until chicken is cooked through. Remove skewers before serving.
Serve with assorted steamed vegetables and corn bread.
