1 lb. ground turkey
2 cups Multi Bran Chex® brand cereal, crushed to ¾ cup
¼ cup chopped onion
1 egg, beaten
2 tbsp. chopped fresh parsley
1 garlic, minced
1 tsp. soy sauce
¼ tsp. ginger
¼ cup water
16oz. frozen Oriental or mixed vegetables, prepared according to pkg. directions, drained
1 cup prepared or bottled sweet and sour sauce
Hot cooked rice
In medium bow, combine turkey, cereal, onion, egg, parsley, garlic, soy sauce
and ginger. Mix well. Using 1 rounded tablespoon meat mixture for each
meatball, form into 2” meatballs. Brown meatballs in lightly greased
skillet over medium heat, turning often. Add water; cover and cook over
low heat 8 to 10 minutes or until no longer pink, stirring occasionally.
Drain. Add vegetables and sweet and sour sauce; cook over low heat,
stirring gently until meatballs are coated and sauce and vegetables are
warm. Serve over rice, if desired.
