1 lb. ground round
1 tsp. crushed red pepper
1 medium red onion, sliced
1 medium green bell pepper, chopped
¼ cup lemon juice
2 tsp. finely chopped fresh mint or ½ tsp. dried mint
1 tsp. beef flavor instant bouillon
2 cups hot coked rice
2/3 cup seeded, chopped cucumber
12 lettuce leaves
In large skillet, brown meat and red pepper; pour off fat. Add onion, green
pepper, lemon juice, mint and bouillon; mix well. Simmer uncovered until
vegetables are tender.
Meanwhile, combine rice and cucumber; keep warm. Place about ¼ cup rice
mixture and 1/3 cup meat mixture on each lettuce leaf; roll up.
Serve immediately. Refrigerate leftovers.
Makes 4 to 6 servings
