Cucumber Salad

3 medium cucumbers, scored lengthwise with tines of fork and tninly sliced
¾ tsp salt
1/3 cup onion
1/3 cup cider vinegar
3 tbsp. olive oil
2 tbsp. sugar
½ tsp. caraway seeds
½ tsp. paprika
1/8 tsp. white pepper

Dice cucumbers in medium bowl Sprinkle with ¼ tsp. of salt. Let stand about 1 hour. Drain.

Blend remaining ingredients in small bowl. Pour over cucumbers, toss to coat. Cover and refrigerate at least 3 hours. Stir before serving.

Makes 6 to 8 servings
