Sesame Pork Salad

3 cups cooked rice
1½ cups silvered cooked pork
1/4lb. fresh snow peas, julienned
1 medium cucumber, peeled, seeded and julienned
1 medium red pepper, julienned
½ cup sliced green onions
2 tbsp. sesame seeds, toasted, optional

Sesame Dressing:
¼ cup chicken broth
3 tbsp. rice or white wine vinegar
3 tbsp. soy sauce
1 tbsp. peanut oil
1 tsp. sesame oil

Combine all ingredients in large bowl, stir well. Set aside.

Combine all the Sesame Dressing ingredients in small jar with lid; shake
vigorously. Pour over rice mixture; toss lightly. Serve at room temp. or
slightly chilled.

Makes 6 servings
