Sparkling Berry Salad

2 envelopes Knox® Unflavored Gelatin
2 cups Ocean Spray® 100% Cranberry-Raspberry Juice
1/2 cups sugar
1 cup club soda
1/4 cup crème de cassis liqueur, optional
1 tsp. lemon juice
1 tsp. fresh grated orange peel
3 cups assorted blueberries, raspberries or strawberries

In med saucepan, sprinkle gelatin over 1 cup juice. Let stand 1 minute. Stir
over low heat until gelatin is completely dissolved, 5 minutes. Stir in
sugar until dissolved.

In large bowl, blend remaining 1 cup juice, soda, gelatin mixture, liqueur,
lemon juice and peel. Chill, stirring occasionally, until mixture is
consistency of unbeaten egg whites, about 60 minutes. Fold in berries.

Pour into 6-cup mold or bowl and chill until firm, about 3 hours. Unmold and
serve, if desired with sour cream.
