2 cups cooked rice, cooled to room temp.
1½ cups cooked turkey breast cubes
½ cup jalapeno Monterey Jack cheese, cut into ½” cubes
1 4oz. can diced green chilies, undrained
2 tbsp. snipped parsley
¼ cup mayonnaise
¼ cup plain yogurt
Lettuce leaves
Tomato wedges for garnish
Combine rice, turkey, cheese, chilies and parsley in large bowl. Blend mayonnaise
and yogurt; add to rice mixture and toss lightly. Serve on lettuce
leaves; garnish with tomato wedges.
