3 large ripe avocadoes, seeded, peeled and sliced
½ cup sour cream
¼ cup lemon juice
1 tbsp. finely chopped onion
1 tbsp. water
¼ tsp. salt
¼ tsp. hot pepper sauce
6 cups torn mixed salad greens
1 large tomato, seeded and chopped
1 cup shredded mild Cheddar or Monterey Jack cheese
1 cup coarsely crushed tortillas chips
In medium bow, mash 1 avocado; stir in sour cream, 3 tbsp. of juice, onion,
water, salt and hot pepper sauce. Chill to blend flavors.
In large salad bowl, sprinkle remaining 2 avocados with remaining 1 tbsp. juice.
Top with salad greens, tomatoes, and cheese; chill.
Just before serving, toss with avocado dressing and tortilla chips.
