Minted Melon Mold

1½ cups boiling water
1 3oz. pkg. lemon flavor gelatin
1 3oz. pkg. lime flavor gelatin
¾ cup ReaLime® Lime Juice from Concentrate
½ cup cold water
1/8 tsp. peppermint extract
2 cups melon balls (cantaloupe, honeydew, etc.)

Coconut Cream Dressing:
½ cup sour cream
3 tbsp. flaked coconut
1 tbsp. honey
1 tbsp. ReaLime® Lime Juice from Concentrate

In medium bowl, pour boiling water over gelatins; stir until dissolved. Add
lime juice, cold water and extract; chill until partially set. Fold in
melon. Our into lightly oiled 5-cup ring mold. Chill until set, about
3 hours or overnight.

In small bowl, combine all the Coconut Cream Dressing ingredients; mix well.
Chill before serving.

Unmold Minted Melon Mold onto serving platter and serve with the dressing.

Makes 8 to 10 servings
