Wild Rice Salad

1 13-3/4oz. can Swanson® Beef or Chicken Broth
1 6oz. pkg. long grain and wild rice
1 11oz. can Dole® mandarin oranges, drained
1 8oz. can sliced water chestnuts, drained
1/4 cup sliced scallions
1/3 cup Hellmann's® Mayonnaise
Lettuce leaves

Reserve 2 tbsp of broth. Add enough water to remaining broth to substitute
for water in the package directions for preparing rice. Cook rice according
to the directions, omitting butter or margarine; cool.

Stir in oranges, water chestnuts, and scallions. Blend reserved broth and
mayonnaise together and stir into rice mixture. Cover and chill 2 to 3 hours.
Serve on lettuce leaves.

6 to 8 servings
