Florentines

½ cup flour
¼ tsp baking soda
¼ cup margarine
1/3 cup packed brown sugar
2 tbsp corn syrup
1 egg, beaten
½ cup Baker’s® Angel Flake Coconut
½ tsp vanilla
2 squares Baker’s® Semisweet Chocolate
1 tbsp margarine

Mix flour and soda. Cream ¼ cup margarine. Gradually add sugar and beat until light and fluffy. Add corn syrup and egg; blend well. Stir in flour
mixture, coconut and vanilla. Drop by half teaspoonfuls onto greased
baking sheets, leaving 2” between. Bake at 350° for 10 minutes. Cool on
sheets 1 minute, remove quickly and finish cooling on racks. (If wafers
harden on sheets, return briefly to oven.)

Melt chocolate and 1 tbsp. margarine in saucepan over very low heat, stirring constantly until` smooth. Drizzle over wafers

Makes 4 dozen
