Lemon Sugar Cookies

1½ cups flour
1 tsp baking powder
¼ tsp salt
1 cup sugar
½ cup shortening
1 egg
2 tbsp lemon juice

Stir together flour, baking powder and slat; set side. In large bowl, beat sugar and shortening until fluffy; beat in egg. Stir in dry ingredients,
then lemon juice; mix well. Chill 1 hour. Shape into 1¼” balls; roll in
additional sugar. Place 2” apart on greased baking sheets; flatten. Bake
at 350° for 8 to 10 minutes or until lightly browned.

Makes about 4 dozen
