¾ cup brown sugar
1 egg
1 cup honey
1 tbsp. grated lemon peel
2-3/4 cups flour
1 tsp. each cinnamon and nutmeg
½ tsp baking soda
½ tsp. salt
1 cup golden raisins
¾ cup mixed candied fruits
1 cup chopped Diamond® Walnuts
Lemon Glaze
1 cup powdered sugar
1½ to 2 tbsp. lemon juice
In large bowl, beat sugar and egg until smooth and fluffy. Add honey, peel and juice; beat well. In medium bowl, sift flour with spices, baking soda and salt; gradually mix into egg-sugar mixture. Stir in fruits and nuts.
Spread batter into greased 15 x 10 pan. Bake at 375° for 20 minutes or
until lightly browned. Cool slightly in pan.
In small combine the Lemon Glaze ingredients and brush over the Jewels. Cool; cut into diamonds. Store in covered containers up to 1 month.
