Elegant Chocolate Mousse

3 square Baker’s® Unsweetened Chocolate
3/4 cup water
3/4 cup sugar
1/8 tsp. salt
3 egg yolks, beaten
1½ tsp. vanilla
1-3/4 cups Deans® heavy cream
3 tbsp sugar
3/4 tsp. vanilla

Melt chocolate in water in saucepan over low heat, stir constantly until
smooth. Stir in 3/4 cup sugar and salt. Bring to boiling over medium
heat, stir constantly. Reduce heat to simmer. Simmer 5 minutes. Continue
stirring constantly.

Blend small amount of hot mixture into egg yolks. Stir into remaining hot
mixture. Cook and stir for 1 minute longer. Remove from heat and cool to
room temp. Add ½ tsp. vanilla.

Beat cream with 3 tbsp. sugar and 3/4 tsp. vanilla until soft peaks form.
Gradually blend in chocolate mixture. Spoon into 9” square pan. Freezer
until firm, at least 6 hours
