1-3/4 cups plus 2 tbsp. flour
½ cup sugar
1½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 egg
¾ cup milk
¾ cup sweetened applesauce
¼ cup margarine, melted
1 cup fresh cranberries, coarsely chopped
½ tsp. cinnamon
In medium bow, combine 1-3/4 cups flour, ¼ cup sugar, baking powder, baking
soda and salt.
In small bowl combine egg, milk, applesauce and margarine; mix well. Add egg mixture to flour mixture; stir just until moistened. Batter will be lumpy; do not overmix.
In small bowl, toss cranberries with remaining flour; fold into batter. Spoon batter evenly into 12 greased muffin cups.
In measuring cup, combine remaining sugar and cinnamon. Sprinkle over the tops of muffins. Bake at 400° for 20 to 25 minutes or until golden brown.
Remove to wire rack to cool.
