2 cups flour
2/3 cup sugar
2¼ tsp. baking powder
¾ tsp. salt
¼ tsp. cinnamon
1 egg
2/3 cup milk
3 tbsp. oil
1 tsp. grated lemon peel
¾ tsp. vanilla
1 cup chopped Diamond® Walnuts
¾ cup coarsely grated pared apple
In medium bowl, sift flour with sugar, baking powder, salt and cinnamon.
In small bowl, beat egg; add milk, oil, lemon peel and vanilla. Stir into dry ingredients, mixing just until flour is moistened. Fold in walnuts and apple. Spoon batter into 12 greased muffin cups. Bake at 400° for 20 to
25 minutes or until golden brown and wooden pick inserted in center comes
out clean.
