1½ cups flour
½ cup sugar
2 tsp. baking powder
½ tsp. salt
½ tsp. nutmeg
½ tsp coriander
½ tsp allspice
½ cup milk
1/3 cup margarine, melted
1 egg
¼ cup sugar
1 tsp. cinnamon
¼ margarine, melted
In large bowl, combine flour, ½ cup sugar, baking powder, salt, and the spices.
In small bowl, combine milk, 1/3 cup melted margarine and egg. Stir into
flour mixture just until moistened.
Line 12 muffin cups with paper liners. Spoon batter into each cup, filing
½ full. Bake at 350° for 20 to 25 minutes or until wooden pick inserted in
center comes out clean. Cool 5 minutes. Remove from pan. Meanwhile
combine remaining 1/4 cup sugar and cinnamon in shallow dish. Roll warm
muffins in remaining ¼ cup melted margarine, then sugar-cinnamon mixture.
Serve warm.
