Cookies 'n Cream Parfaits

1 envelope Knox® Unflavored Gelatin
1/4 cup cold water
2 cups vanilla or chocolate ice cream, softened
1 cup Deans®whipping or heavy cream
22 chocolate sandwich cookies, such as Oreos®
1 tsp vanilla extract

In small saucepan, sprinkle unflavored gelatin over cold water; let stand 1 minute. Stir over low heat until gelatin is dissolved 3 minutes. Remove from heat and let stand until lukewarm about 1 minute.

In bender or food processor, place ice cream, whipping cream, 10 cookies and vanilla in the blender and process until blended. While processing
through feed cap; gradually add lukewarm gelatin mixture and process until
blended. Let stand until mixture is slightly thickened about 5 minutes.

Meanwhile, coarsely crush remaining 12 cookies. In parfait glasses or dessert dishes, alternately layer gelatin mixture with crushed cookies. Chill until set about 2 hours.

Garnish if desired with whipped cream and additional cookies.
