Molasses Muffins

1-2/3 cups flour
3 tbsp. sugar
2 tsp. baking powder
1 tsp. ginger
½ tsp. salt
½ cup molasses
2 eggs, slightly beaten
¼ cup oil
¼ cup milk

Place paper liners in 12 muffin cups. Set aside.

Mix flour, sugar, baking powder, ginger and salt in medium bowl. Make a well in center of mixture. Set aside.

Blend remaining ingredients in small bowl. Pour into well in dry ingredients.

Stir just until ingredients are moistened. Pour into lined
muffin cups, filling each about 2/3 full.

Bake at 400° about 15 minutes, or until centers spring back when touched lightly.

1 dozen muffins

VARIATION:
Orange Raisin Muffins
Follow recipe above, omitting ginger. Add ½ cup raisins and 2 tsp. grated
orange peel to dry ingredients.
