Pecan Peach Muffins

Topping:
½ cup chopped pecans
1/3 cup packed brown sugar
14 cup flour
1 tsp. cinnamon
2 tbsp. margarine, melted

Muffins:
1½ cups flour
½ cup sugar
2 tsp. baking powder
1 tsp. cinnamon
¼ tsp. salt
½ cup margarine, melted
¼ cup milk
1 egg
2 medium peaches, peeled and diced (about 1 cup)

Paper-line 12 muffin cups. Prepare topping: In small bowl, combine pecans,
brown sugar, flour and cinnamon. Add margarine, stirring until mixture is
crumbly. Set aside.

To prepare muffins: In large bowl, combine flour, sugar, baking powder, cinnamon and salt. In small bowl, combine margarine, milk and egg until blended. Pour into flour mixture stirring just until moistened. Fold in peaches.

Spoon into muffin cups. Sprinkle Topping over batter. Bake at 400° for 20 to 25 minutes or until wooden pick inserted in center comes out clean. Remove from pan.

Makes 12 muffins
