Brown Rice, Mushroom and Ham Hash

1 tbsp. olive oil
2 cups sliced fresh mushrooms
1 small onion, minced
1 garlic, minced
3 cups cooked brown rice
1 cup diced cooked ham
½ cup chopped walnuts, optional
¼ cup sniped parsley
1 tbsp. white wine vinegar
1 tbsp. Dijon mustard

Heat oil in large saucepan over medium low heat until hot. Add mushrooms,
onion and garlic; cook until tender. Stir in remaining ingredients; cook
and stir until heated thoroughly.

Makes 8 servings
