Pineapple Dream Bars

½ cup margarine, softened
1 cup brown sugar
1-1/3 cups flour
1 8½oz. can Dole® Crushed Pineapple in Juice or Syrup
2 eggs
1 tsp. baking powder
1 tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. salt
1 tsp. rum extract
1½ cups flaked coconut
1 cup chopped walnuts
½ cup chopped maraschino cherries

In medium bow, beat margarine and 1/3 cup brown sugar. Blend in 1 cup flour until mixture is crumbly. Pat into bottom of 13 x 9 glass baking pan. Bake at 350° for 10 to 15 minutes or until golden. Keep oven hot, but remove pan to cool.

Drain pineapple well, pressing out excess liquid with back of spoon. In large bowl, beat eggs with remaining brown sugar until thick. In small bowl, combine remaining flour, baking powder, spices and salt. Stir dry ingredients and rum extract into egg mixture. Fold in pineapple, coconut,
nuts and cherries.

Spread over baked crust; bake 30 minutes longer or until set. Cool slightly on wire rack; cut into bars.

Make about 18 bars
